Description
Rendang is a traditionally dry curry in that it doesn’t have a lot of ‘sauce’. Rather it is slow cooked until the meat is very tender, and the sauce is dried off to create a caramelisation around the meat creating an intense, spicy flavour.
Originating in the Sumatra region of Indonesia, Rendang has intense tropical aromatics of chillis and other full flavoured spices. As it cooks low and slow, the coconut takes on a nutty, buttery sweetness, making it strong and full on in flavour.
Rocky Plain is a locality that extends from the Kosciuszko Road between Cooma and Jindabyne, west to Kosciuszko National Park, as far north as Lake Eucumbene and south to Dalgety and the Snowy River.
There is also a campground in Kosciuszko National Park named Rocky Plain that is just off the Snowy Mountains Highway at an elevation of approximately 1400m. It is not far from the location of Sawyers Hut, which was destroyed in the 2020 Bushfires, and now only the brick chimney remains.
