Who am I and how did I get started?

Raised in the scrub of SW Queensland, being the youngest in the family of ten, I learned to cook in the camp ovens up the paddock, whilst out working with the ol’ man.

I ended up as a laborer and at the age of 28 years, I was involved in an accident, which left me without movement in my legs for about 10 months. I obviously couldn’t return to heavy physical work and commenced studies in Heritage and Interpretive Tourism, which led me to Ranger Guiding at Skyrail International in North Queensland.

Having an affinity with the great outdoors and interest in Botany, I acquired accreditation in archery, canoeing, high ropes, abseiling and vertical rescue.

After working as a Unit Support Officer in Environmental Education and Outdoor Recreation within Education Queensland for 10 years, I have been demonstrating camp oven cooking and bush skills professionally to fellow adventurers since 2010, travelling the country and abroad for a minimum of six months of the year.

This is where I received feedback and requests to produce recipe books and educational programs. Due to increased customer demand, I am able to offer Ranger Nick merchandise, manufactured in Australia, with the exception of my cast iron camp oven brand, which are made overseas to my design and specifications.

In 2019, I was involved in successfully claiming the World Record title for the Longest Damper at 153.002 metres, granting me a place in the Guinness Book of Records.

Known as the Aussie entertaining Bush Cook, I have guest appearances on “Step Outside with Paul Burt”, weekly radio segments on “West Bremer Radio”, monthly podcast interviews and am the author of four books. I have released a DVD, developed a comprehensive Outdoor Training Program and get frequently invited to judge at large camp oven cooking competitions.

As I walk my talk and live in a rural area, drought, bushfires, floods and now Covid have all affected how I am able to pass on my knowledge to fellow Australians. Hence I am focusing my efforts to online services, which is quite a challenge for a bushie, let me tell you.

During travel restrictions and event cancellations, I have published book number four, which is a collection of over 180 recipes I have shared on the radio in past years.

Covid has also inspired me to launch a new product line – Curry Spice and Recipe Kits – encouraging you to eat healthy and boost your immune system. It is designed to be family friendly with super easy cooking methods, where you are in control of the heat level. The kits are free of any additives, blended and portioned to make a meal of four, which eliminates the purchase of exotic spices you hardly ever use.
